SLOW COOKER AMISH BEEF AND NOODLES
Prep Time 10 Cook Time 7 Serves 8
2 1/2 lbs chuck roast
1 packet onion soup mix
1 14 oz can beef consommé
1 10 oz can cream of mushroom soup
1 cup milk or cream
DIRECTIONS
Heat a skillet over high heat. Add 1 tablespoon olive oil. Season chuck roast with salt and pepper, then sear in the skillet for 3-4 minutes, until browned. Flip and repeat on the other side. If your slow cooker has a 'Roast' or 'Sauté' setting, you could use this.
Place the roast in the slow cooker, and sprinkle with the onion soup mix and the au jus mix. Pour the consommé and cream of mushroom soup over top and briefly mix together. Add in the mushrooms.

These Amish Style Beef and Noodles are a tribute to that style cooking. Amish diets are not necessarily low fat, but really epitomize cooking and eating fresh.
Amish Style Beef and Noodles. As a long time Ohio resident, one of my favorite destinations is the Amish country in and around Charm, Ohio. Beautiful rolling hills,well kept farms, nostalgic little shops and restaurants with great home made food. One of our families favorite spots was the Chalet in the Valley restaurant in Millersburg, Ohio. The food was great, and after dinner you could walk across the street to visit the cheese shop. There you could great cheeses, meats, clocks, and other home made Amish delights. On one visit for lunch the special was a family style beef and noodles that was absolutely wonderful and I remember it fondly. So here’s my take on a great dinner that’s easy to prepare and sure to delight.

A beautiful Sunday dinner for the entire family. Plate it up family style and serve with a fresh salad or cut vegetables.
Equipment
Cast Iron Dutch Oven
Ingredients
3lbBeef chuck roast
32ozBeef culinary stock
4cupsBeef Bouillon
1/8tspThyme
1/2cupwine
8ozsliced fresh mushrooms
12ozMrs. Millers Wide Noodles
Salt
Pepper
1tbspoil
Instructions
Let roast come to room temperature and rub both sides with salt.
Heat oil in 5 Qt. dutch oven over medium heat until hot.
Add stock, bouillon, wine, and thyme.
Cover and simmer for 2 hours. Salt and pepper to taste.
Add mushrooms and continue simmering for 30 minutes.
Add noodles, cover and continue simmering till noodles are tender. Roast should fall apart.
Notes
If you really want to go all out on the home made, here are a couple of tips. 1) Consider home made noodles. Mrs. Millers are great but can be hard to find. 2) Try some home made beef stock. Search this site for stock.
